Prepare Ramen Egg - Marinate the boiled egg in 1/4 cup of soy sauce, 1/4 cup of vinegar and 3/4 cup of water. Leave overnight for best results, if not 30 minutes will do the trick too - the same time it will take you to prepare this chicken ramen recipe.
Take a large pot, heat the sesame oil.
Add all the vegetables and stir-fry.
Now prepare the sauce by adding the oyster sauce, chilli-garlic, soy sauce, rice vinegar, fish sauce, ginger garlic sauce and bring back to simmer.
Now add the chicken thighs, stir well for 5 minutes and then add the fresh chicken stock and bring to boil.
Cover and let it simmer on medium heat for 2 minutes.
Serve with the ramen egg and sprinkle over sesame seeds, coriander leaves, spring onions and lime wedges to garnish.
