Sabudana Khichdi/ Tapioca pearls/ sago seeds

Peanuts are a good source of protein, fat, and various healthy nutrients. Studies show that peanuts may even be useful for weight loss and are linked to a reduced risk of heart disease.


Peanuts are one of the richest dietary sources for biotin, a nutrient essential for hair growth and during pregnancy. They are also rich in copper, niacin, folate, manganese, vitamin E, thiamine, magnesium and phosphorus.

Sabudana also known as sago seeds or tapioca pearls are good for people who need to gain weight quickly may benefit from including tapioca in the diet. One cup of tapioca pearls provides 544 calories and 135 grams (g) of carbohydrates.



On the other hand Tapioca is a good source of calcium and iron and low in sodium.

Doctors may recommend tapioca as a suitable source of calories for people with conditions such as irritable bowel syndrome(IBS) and diverticulitis that can cause flares of digestive symptoms.


Recipe:


Sabudana khichdi /sago seeds /Tapioca pearls



Ingredients:

Sabudana/sahi seeds /Tapioca - 2 cups

Unsalted peanuts - 1/2 cup

Potatoes - 1 large

Green chillies - 2

Curry leaves - 4

Coriander - 1/3 cup

Oil or ghee - 2 tbsp

Cumin seeds - 2 tsps

Jaggery - 1 tsp (optional) you can also use sugar or brown sugar.

Sweet lime - 1

Salt - 1/2 tsp


Preparation:

1. For this recipe you need to have the sabudana pearls to be pre-soaked in water for atleast 2-3 hours or preferably overnight.

Tip: The water level needs to be just enough to cover all pearls to allow them to fluff up properly and not get sticky.

2. Start with roasting your peanuts. This will allow for a nice aromatic peanut powder to be formed.

Tip: Roasting peanut is the best way to de-skin them. Once roasted just put them on a plate and shake them to remove the skins and blow the skins away. Also wet the peanuts slightly prior to roasting.

3. Save 10-12 whole peanuts for later and Blend the rest to form a coarse powder.

Tip: Use a single blade attachment to get the correct coarse consistency.

4. Now heat a pan and add oil.

5. Once the oil is hot add cumin seeds.

6. As the cumin seeds will start sputtering add the coriander, green chillies and curry leaves.

7. Cut the boiled potatoes into bite size cubes and add to the pan.

8. Once the boiler potatoes have slightly caramelised add the sabudana pearls.

9. Now once the sabudana is properly coated with oil and other ingredients add the corse blended peanuts.

10. Add the whole roasted peanuts now.

11. This is optional step but I love the addition of this ingredient because it just brings a lot of flavour to the whole dish - 1 tsp jaggery.

12. Squeeze in half a sweet lime. Leave the rest for garnish.

13. Cook and stir for another 2 minutes.

14. Plate it, garnish with some coriander and sweet lime.
