Chicken Laksa - Dairy free

Laksa is another word for a spicy noodle soup popular in the Peranakan cuisine in Southeast Asia. It consists of thick wheat noodles, egg noodles or rice vermicelli with chicken, prawn or fish, served in spicy soup based on either rich and spicy curry coconut milk or on sour asam (tamarind or gelugur).


This recipe is particularly very soothing and creamy during those cold winter seasons. It sure is creamy and rich and will fill you up pretty quickly but is still light on calories and amazing on your taste buds. It is one of my favourite South-Asian dishes and I am pretty sure it will be yours too. You just have to prepare it and try it to really fall in love with this recipe.


RECIPE:


Ingredients:

Quantity Grams/ ml

1 Egg noodles nests 2

2 Diced chicken thighs 210

3 Coconut milk 200

4 Red pepper 1

5 Spring onion 1

6 Red chilli 1

7 Garlic clove 1

8 Coriander bunch 1

9 Lime 1

10 Red thai curry paste 2 tbsp

11 Chicken stock powder 1 tbsp

12 Peanut butter 2 tbsp

Instructions:

1 Prep you vegetables- chop pepper in small cubes, thinly slice the spring onions, halve and de-seed the chilli. Roughly chop garlic and coriander and zest lime and halve it.

2 To make the soup - heat oil on medium heat. Add pepper, garlic, chilli and half the spring onions.

3 After cooking for 2 mins add the red curry paste, cook for a minuted and add coconut milk, chicken stock powder and boiling water. Bring to a simmer.

4 Season the soup- Add the peanut butter, salt and pepper and simmer for 10 mins.

5 Cook the chicken - Heat the oil in a pan, add diced thigh chicken with lime zest and season with salt and pepper. Cook for 10 mins.

6 Cook the noodles- Add the egg noodle nests in the Laksa/soup.

7 Finally add the chicken to the Laksa, remove from heat and add lime juice. Season with coriander and spring onions and serve.
